Often this salami is called cup but in many regions it is also known as: capocollo, capicollo, ossocollo, fennel, capicollo, loin or lonzino.
As every sausage of the Italian tradition is used both seasoned and in various tasty recipes. Capocollo is a cured meat obtained from pork meat and its name derives from the part used, that is, the upper portion of the neck and part of the shoulder.
Before being stuffed into the natural casing, the selected meat is salted and massaged so it makes the salt penetrate well, added the spices and aromatic herbs. The Butchery D ‘Andrea then proceeds with the seasoning of the capocollo sausage according to Lucan traditions.

It is generally proposed as sliced, to be consumed with bread. The capocollo can also be used to add more flavor to meat rolls to be made with peas or to add small pieces to tagliatelle made in houses with mushrooms.
Even the apples and figs combine perfectly with the cup. For those looking for really tasty flavors, a hard cheese is ideal to serve with the capocollo. The flakes of pecorino, for example the local one of Moliterno, or parmigiano reggiano, blend perfectly with the cup.
If you are looking for a simpler combination, even two slices of wholemeal bread or cereals with a cup are a tasty and healthy refill.

When choosing a wine to be matched with a cup-based dish, it is preferable to opt for a sparkling white wine, a prosecco or a moscato, better if slightly cold and perfectly match the cured meat of the cup giving it a touch of verve and lightness.

Once sliced, the cup (capocollo) is kept in the refrigerator for a day at most. Much longer is the whole preservation, should be kept in a cool place and, once started, covered with food film and consumed within a month.
